I live in Gambo, Newfoundland. We are located on a big island in the middle of the North Atlantic Ocean--lovingly called The Rock. Gambo was once divided into three smaller communities, known as Middle Brook, Dark Cove & Gambo. My house is located in what used to be Dark Cove. Our house has a little pantry, that I absolutely adore. I love to cook and bake, so I thought what better name could there be for my first blog than... My Dark Cove Pantry!!

We had a nice chilly day here on Monday and I spied one little can of crabmeat in the pantry, so I thought I'd make some crab tarts. These are one of my favourites for Christmas time. They freeze well so I usually make a couple dozen and keep them in the freezer. It makes things so much simpler during the busy festive season----just take them out of the freezer and pop them in the oven for 10-15 minutes and serve. I always make a batch of these when we get fresh crab in the summer, but now I'm back to using store-bought, but they are still simply delicious.
Here's my recipe.....
cup softened cream cheese
1/4 cup grated mozzarella cheese
cans crabmeat--drained (1 cup of fresh crabmeat)
tbsp green onion (finely diced)
tbsp finely diced red or green pepper
tsp worchestershire sauce
of salt & pepper
all ingredients and spoon into unbaked pastry cups (3/4 full)
at 350* for 20 minutes
2 dozen appetizers
I made up a half batch of this recipe with the one can of crabmeat.
here's how mine turned out---have a look..................................
